Strawberry Hot Chocolate with Homemade Marshmallows

What better way to warm up on a frigid winter day then with a steamy cup of hot chocolate? With this recipe you can get cozy with a delicious treat and skip the guilt because it's chock full of nourishing ingredients, without any of the bad stuff.
This recipe serves one, but you can surely double, triple, or quadruple it if need be! I chose to use coconut milk to keep it dairy free. Coconut milk is the best option to avoid the extra ingredients that plant-based milks typically include. like gums, emulsifiers, and sugar. Be sure to choose full fat coconut milk for extra creaminess.
Ingredients:
1 13oz. can full fat coconut milk
1 can coconut cream
1-2 tbsp raw cacao powder (NOT cocoa)
1-2 tbsp honey
1 scoop collagen peptides
1-2 tbsp strawberry powder
Whisk ingredients in a saucepan. Adjust flavoring as desired, adding more coconut milk if needed. Warm and whisk until smooth. You can use an immersion blender if you have one but it shouldn't be necessary. Pour into mug and garnish with marshmallows and cinnamon stick, if desired.
